Think Purple! Dreamy Ube Vanilla Ice Cream!
Hey flavor adventurers! Ready to add a pop of color to your summer? If you’re as obsessed with the magical purple yam known as ube as I am, you’re in for a treat. This ube vanilla ice cream is an easy dream ice cream recipe that tastes like a tropical vacation.
Why Ube? Why Not?!
Ube (pronounced ooh-beh) has a subtle sweetness with hints of vanilla and even a little nuttiness. It’s a flavor explosion that pairs perfectly with the classic vanilla we all know and love. And hey, it’s purple! Your kitchen (and your Instagram feed) will thank you.
Ingredients You’ll Need:
- 1/4 – 1/2 tsp Ube Extract: This is where the magic happens! Start with 1/4 tsp, taste it, and add more if you want a stronger ube flavor.
- 2 cups Heavy Whipping Cream: The base of our creamy, dreamy ice cream.
- 1 cup Milk: Adds some lightness and balances out the richness.
- 2 tsp Vanilla Extract: Pure vanilla enhances the whole experience.
- 1/2 tsp Guar Gum: Our secret weapon! It helps create a smooth and scoopable texture.
- 3/4 cup Sugar: Just the right amount of sweetness.
Instructions:
- Whisk It Good: In one bowl, whisk the sugar and guar gum then add in all the liquid ingredients and keep whisking by hand until all the ingredients are fully incorporated.
- Churn: Transfer the mixture to your ice cream maker and churn following the manufacturer’s instructions. It usually takes us about 20 minutes to reach the desired consistency in our Kitchen Aid ice cream maker attachment.
- Transfer to ice cream container: Transfer the ice cream to a freezer-safe ice cream container.
- Freeze and Enjoy: Cover your container and freeze for at least 6 hours, or preferably overnight. Scoop and enjoy your gorgeous, flavorful creation!

- 1 cup milk
- 2 tsp vanilla extract
- 1/2 tsp guar gum
- 3/4 cup sugar
Instructions
- Whisk the sugar and guar gum in a bowl.
- Add the milk, heavy cream, vanilla and Ube extract, and keep whisking by hand until fully incorporated.
- Transfer to the ice cream maker and churn following your machine’s instructions.
- Transfer to an ice cream freezer container and freeze overnight.
