Look out world, it’s almost Thanksgiving!!! You know the times when you want to bake something yummy but you don’t actually feel like baking anything at all? Well I’ve got you covered! ????
These Happy Thanksgiving No Bake Pumpkin Cheesecake Bites are SO easy to prepare and most importantly ➻ eat, you’ll spend less of your time baking and more of it enjoying (or ignoring) your family THIS Thanksgiving.
I didn’t actually create this recipe but I stumbled upon it on Running With Spoons and I’m SO glad I did. You see, I’m actually baking a little one to join us at the end of January (we are super duper excited! ????) and I don’t really have much time nor the energy to bake anything else at the moment.
I’m just going to get right to this easy recipe. You start by processing graham crackers and coconut flour until broken down to fine crumbs. Then, you add some cream cheese, pumpkin puree, spices, vanilla extract and continue processing until mixture sticks together and a dough begins to form.
If it seems too crumbly or dry, add a small spoonful of either cream cheese or pumpkin to reach a moister consistency. The dough should be moist enough to hold together when you press it between your fingers, but not so moist that it’s sticky. I think I added just a little too much pumpkin to mine but it still came out good!
Once that’s done, you transfer the dough to a parchment paper lined 9×4 loaf pan (with extra inches overhanging on the sides) and use a spatula to spread evenly, pressing down firmly. Set aside.
Place some white chocolate chips, coconut oil in a microwave-safe bowl and heat on high in 30 second increments, stirring in between until melted and smooth.
Pour chocolate over dough and spread evenly. Top with more graham cracker crumbs, if desired, and transfer pan to fridge for at least an hour to allow to set.
Allow to thaw for a few minutes before using a sharp knife to cut into individual bars or bites.
