This is one of my favorite chicken recipes. The garlic/lemon/cilantro flavors work really well in this Garlic Lemon Chicken Potatoes recipe, adding a tangy flavor and the potatoes make this dish more filling.

Ingredients
- Chicken Drumsticks – 6
Marinade
- Fresh Lemon Juice – 2 large lemons
- Olive Oil – 2 tbsp
- Garlic – 4 cloves, mashed
- Herbs De Provence – 1 tsp
- Cinnamon – 2/8 tsp
- All Spice – 1/8 tsp
- Salt – 1 tsp, or to taste
- Black Pepper – 1/2 tsp, or to taste
Potatoes
- Potatoes – 4, medium, sliced to your liking
- Olive Oil – 1/2 tsp
- Garlic – 1, mashed
- Herbs De Provence – 1 tsp
- Cilantro – 1 cup, chopped
- Salt – to taste
Sauce
- Fresh Lemon Juice – 1 large
- Olive Oil – 1 tsp
- Water – 1/2 cup
- Salt – to taste
Instructions
- Skin/wash the chicken drumsticks and place in a sealable bowl. Poke holes on each side of the chicken with a knife to ensure the marinade is absorbed.
- Add all the marinade ingredients and mix well. Seal the bowl with cover or plastic rap and refrigerate overnight or for at least 2 hours.
- Preheat the oven to 450 degrees F.
- In a baking dish, arrange the drumsticks along with the marinade mixture and cook for 30 minutes, turning once, or until no longer pink and liquids run clear when chicken is poked.
- In the meantime, saute the potato ingredients until tender.
- Remove the baking dish and add the potatoes. Mix the sauce ingredients and pour over the chicken/potato mixture. Cover with foil and cook for an additional 30 minutes.
- Remove the foil, turn the chicken and cook for an additional 15 minutes until the chicken is slightly browned. You can also broil for a few more minutes if you prefer the chicken to be browned a bit more.
- Serve hot with a fresh salad.
