These snack boxes are my take on the Starbucks Protein Bistro Box. We used to grab a box all the time when taking road trips or spending a long day running errands. I’ve since created my own versions and we’ve been prepping these weekly!
I prepare the snack boxes in advance, on Sundays, for the whole work-week. I so look forward to having my afternoon snack at work now. No more junk from the vending machines! (it’s ok to have the occasional bag of chips though, right? That’s what I tell myself at least????.)
Here are 3 ideas to get you started. I created the American, Mexican and Mediterranean inspired Protein Bento Snack Boxes:
The American: Peanut Butter, Boiled Egg, Crackers, Celery Sticks, Baby Carrots, String Cheese, Grapes & Apple slices.
The Mediterranean: Hummus, Boiled Egg, Crackers, Carrots, Cucumbers, Cherry Tomatoes, Olives and Cheese.
The Mexican: Guacamole, Boiled Egg, Carrots, Red Bell Pepper, Tortilla Chips, Grapes & Cheese.
Though the above combinations are amazing, you can literally put anything in these containers! Just open up your fridge, find some fresh veggies and fruits and pick your proteins. I recently added some marinated artichoke hearts, raspberries and home-made banana muffins. The possibilities are endless. These will also be perfect for the warmer days in Spring/Summer when we start making trips to the park/beach.
