Happy #snowpocalypse2016!
I meant to publish this post several days ago but we got more snow than I had ever hoped for! I got caught up with binge watching, eating, lego building and couch napping.
Though it was great to be home, we couldn’t help but feel a little antsy when the plows never showed up. You should have seen the first time we jumped in excitement as we heard the plows making their way…only to realize it was an airplane! Ha!
Proverb of the week: Necessity is the mother of invention. In an effort to diminish the claustrophobic panicky feelings that were emerging, I created the best melt-the-snow-away hot and Hearty Artichoke Spinach Dip…ever!
Instead of too much cheese, this dip is filled with a LOT of artichokes and delicious hearty veggie goodness instead. It was all very simple really.
Heat olive oil in a large skillet over medium-high heat. Sautee onion, green onion, garlic and mini peppers until tender, about 3-5 minutes.
Add spinach and continue cooking until slightly wilted, about 3 minutes.
Add half the chopped artichoke hearts along with all remaining ingredients into a food processor and blend to desired consistency.
Mist a 1 quart casserole dish with cooking spray. Spread the dip mixture along with the remaining chopped artichokes in the dish.
Bake until bubbly and slightly golden, 20-25 minutes.
I love it when I’m faced with difficult situations like, you know, being stuck in the house because mountains of snow are accumulating outside with no end in sight. Because, ingenious creations like Hearty Artichoke Spinach Dip come to life. My husband loves when that happens. And you know what they say; happy husband = happy life! Or is that the other way around?
Anyhow, all I know is that one bite in and I was saying cabin fever shmacin fever! Multigrain crackers get over here, you have important work to do. 😉
Garnish your dip with chopped green onions and enjoy! Munch on friends! 🙂

- Artichoke Hearts – 18 ounces, chopped.
- Baby Spinach – 5 cups, fresh.
- Red Onion – 1/2, chopped.
- Mini Peppers – 4, assorted colors, chopped.
- Cream Cheese – 8 oz, at room temperature.
- Greek Yogurt – 1 cup, plain.
- Grated Parmesan Cheese – 1 cup.
- Garlic – 3 cloves, minced.
- Green Onion – 1, chopped (more for garnish).
- Lemon Juice – 1 tbsp.
- Black Pepper – 1/4 tsp.
- Salt – 1/4 tsp.
- Olive Oil – 1 tsp.
Instructions
- Preheat oven to 450 degrees F.

Notes
– This is thick dip. If you prefer less thickness, use less artichokes.
– For leftovers, I would add a bit of water before reheating.
