So about Sunday’s breakfast…↑ OH MY GWOD! Who knew oatmeal could look this appealing!?
One of the best things about going to Costco is being able to buy our favorite foods in bulk. Because, I don’t know about you, but grocery shopping is not really one of my favorite things to do. So it all works out! Until one day when I’m cleaning out my pantry and I find this ginormous, this huuuuge, I mean like one of those bags the whole cast on ‘The Walking Dead’ can survive on for years kinda bag, of old fashioned oats.
When did I buy this and…WHY?! Because quite honestly, whenever I hear or see oatmeal, my initial reaction is usually meh…bland, boring and uninteresting. 😐 But oats are so healthy; fiber-rich and packed with minerals and vitamins…UGH, that’s why I bought them. Now how to make these edible?
Yeah I could add the typical honey or a banana and some blueberries…but to me that’s still meh and I. just.can’t! So I shoved the bag back where it belonged, in it’s lonely corner, and pretended like I had never seen it.
That’s when I learned, people, that you can’t lie to yourself! No matter how much you try to ignore and burry unwanted things (or feelings), they’ll just eat at you until you address whatever needs addressing! And in my case, it was that big ol’ bag of unwanted oats 😛
So back to the drawing board; how to make oatmeal not suck?! 😉
I was feeling hopeless until one day…I tried an avocado banana smoothie which had me going hmm. Then, my husband came home with dragon fruits. It just all came together in my head. I knew this was going to be it. When you fluff avocado with banana and add that on top of oatmeal that is mixed with some strawberry spread ← Oh my goodness, this is like THE best thing to happen EVER! Add an exotic and oh so colorful dragon fruit, kiwi, pomegranate, apple, raisins and it’s almost perfect. A touch of dry coconut flakes and I’m SOLD!
Oatmeal, you have a new place in my heart. I’ll be seeing a whole lot more of you and I just can’t wait! 🙂
