Garlic Lemon Chicken Potatoes

Ingredients
  • Chicken Drumsticks - 6
Marinade
  • Fresh Lemon Juice - 2 large lemons
  • Olive Oil - 2 tbsp
  • Garlic - 4 cloves, mashed
  • Herbs De Provence - 1 tsp
  • Cinnamon - 2/8 tsp
  • All Spice - ⅛ tsp
  • Salt - 1 tsp, or to taste
  • Black Pepper - ½ tsp, or to taste
Potatoes
  • Potatoes - 4, medium, sliced to your liking
  • Olive Oil - ½ tsp
  • Garlic - 1, mashed
  • Herbs De Provence - 1 tsp
  • Cilantro - 1 cup, chopped
  • Salt - to taste
Sauce
  • Fresh Lemon Juice - 1 large
  • Olive Oil - 1 tsp
  • Water - ½ cup
  • Salt - to taste
Instructions
  1. Skin/wash the chicken drumsticks and place in a sealable bowl. Poke holes on each side of the chicken with a knife to ensure the marinade is absorbed.
  2. Add all the marinade ingredients and mix well. Seal the bowl with cover or plastic rap and refrigerate overnight or for at least 2 hours.
  3. Preheat the oven to 450 degrees F.
  4. In a baking dish, arrange the drumsticks along with the marinade mixture and cook for 30 minutes, turning once, or until no longer pink and liquids run clear when chicken is poked.
  5. In the meantime, saute the potato ingredients until tender.
  6. Remove the baking dish and add the potatoes. Mix the sauce ingredients and pour over the chicken/potato mixture. Cover with foil and cook for an additional 30 minutes.
  7. Remove the foil, turn the chicken and cook for an additional 15 minutes until the chicken is slightly browned. You can also broil for a few more minutes if you prefer the chicken to be browned a bit more.
  8. Serve hot with a fresh salad.
