Chicken Kabobs on an open grill


Scale the recipe as you see fit. The ingredients and nutrition facts below are for one serving.


  1. Costco – Organic Chicken Breast, 200 g
  2. Whole foods – Zucchini, 20 gram
  3. Whole Foods – Squash, 20 gram
  4. Lemon Juice to cover all the chicken
  5. Tomato Paste 1 tbsp
  6. Seasoning


  1. Cut the chicken breast in cubes
  2. Marinate with enough lemon juice to cover all the chicken.
  3. Add chicken seasoning to taste
  4. Add tomato paste
  5. Cover and let marinate in the fridge for a minimum of 4 hours
  6. Skewer and grill


  • Marinate in a shallow container to make sure all the chicken is submerged in lemon juice.
  • Or marinate in ziplock bags to portion and freeze as needed.
